Honey Balsamic Chicken: Cooking without a Recipe

It seems like it has been raining for years here in Georgia. The sun finally came out today for about 20 minutes! I forgot what it felt like to feel the warmth of the sun on my skin... I wish I had gotten a picture of it before it went back behind a cloud...

This was a nice surprise from my husband when he came home from work! Daffodils are my favorite flower, but they only come out for a few weeks at most, and then they're gone! I love bringing them inside and letting them bring a little bit of life to the house...

Tonight I just felt like cooking something without using a recipe. I had 3 Chicken Leg Quarters leftover, so I decided to do a quick marinade using things I know taste good together. I used 1 Tbs Olive Oil, 2 Tbs Liquid Aminos (Soy Sauce), 1 Tbs Balsamic Vinegar, 1 tsp Garlic & Pepper Seasoning (I seriously LOVE this stuff), and 1 Tbs Honey. I put it all in a gallon Ziploc bag with the chicken and let it sit in the fridge for about an hour.

I baked it at 375 for 30 minutes and then bumped it up to 425 for 10-15 more minutes so the skin would really get crispy!

048On the side, I made brown rice. I hate brown rice by itself, but I found this recipe from Simply Taralynn last week and I knew I wanted to try it!

I mixed 3 cups cooked brown rice, 1/4 cup Seasoned Bread Crumbs, 2 Tbs Olive Oil & some more Garlic & Pepper Seasoning.

I ended up eating only the drumstick, but I ate 1/3 cup of the rice and 1/2 cup of broccoli. On the broccoli is a little light butter, Parmesan cheese and... Yes, more Garlic & Pepper seasoning. I put that stuff on everything.

Honestly, tonight I didn't count calories or points. I just ate what I wanted, used portion control and felt great about it. Tomorrow I will get back to tracking, but tonight it was nice to just enjoy cooking and eating without all that stress.
