Sweet and Spicy BBQ Chicken

Tonight was one of those nights when I had a pack of chicken, but no plans for what to do with it... I had been running errands literally all day, so when I got home I wanted something easy and delicious for dinner. So, I came up with a "semi-homemade" recipe which is perfect for a quick, weeknight meal!

I used 2 pounds of chicken breast tenderloins, but this recipe works great with boneless pork chops too!

Mix 1 can of diced tomatoes, 6 TBS of your favorite BBQ sauce, 2 TBS Worcestershire sauce, 1-2 TBS hot sauce, and 2 TBS brown sugar.

Place the chicken in your pan, drizzle with olive oil, and season with salt and pepper. Pour the BBQ sauce mixture on top. Bake at 350 for 30-minutes, or until the chicken is cooked all the way through and the sauce is starting to bubble on the edges.

This step is optional... I remove the chicken from the pan, and use an immersion blender to blend the tomatoes into the sauce. You could also blend this in a blender or food processor. I leave the tomatoes a little more in tact, but you could blend them all the way if you prefer. Using crushed tomatoes in place of the diced would also work!

Place the chicken back in with the sauce and spoon on top of the chicken.

I have made this recipe for years, and it is so delicious every time. I served mine with sweet potato chips and some left over Taco Salad.

Using this Recipe on the Grill:

You could use this recipe with grilled (rather than baked) chicken, too! What I have done in the past is mix the sauce ingredients in a small pot, bring the mixture to a boil, and then simmer for 30 minutes... Then blend.

You can baste the chicken with the sauce before and after grilling, or just pour it on top after you've finished grilling! I absolutely love this easy sauce, which just makes bottled sauce a little bit more {special} : )
