Pecan Pie Cookies

Yesterday I made Pecan Pie Bars, and while they were really delicious, they were kind of complicated. You can find the recipe here.  So, today when I realized I had pecans leftover and I decided to try to come up with a recipe that would be easy and quick since Thanksgiving is only 2 days away! These cookies are quick and easy, and I'm sure they will be a crowd pleaser!

Pecan Pie Cookies

Makes about 2 1/2 dozen.

  • 2  sticks butter, at room temperature
  • 2/3 cup brown sugar
  • 1/2 tsp vanilla
  • 1 Tbs water
  • Pinch of salt
  • 1 cup crushed graham crackers (About 4 sheets)
  • 1 cup all purpose flour
  • 1 cup chopped pecans

Cream butter, brown sugar, vanilla, water and salt together with an electric mixer or hand mixer. Add the graham crackers and flour, continuing to use the mixer to ensure the graham crackers are combined well.

Gently fold in the pecan pieces.

Spoon the dough onto a cookie sheet lined with parchment paper. I used a Tablespoon but you could use a teaspoon to make mini-cookies.

Bake 20-25 minutes. Allow to cool before removing them from the baking sheet.
